Gelatin & Pudding Recipes

    Unflavored Gelatin (compare to Knox)
    Use 1 tablespoon to gel 2 cups liquid. When a recipe calls for one envelope of gelatin, use 1 tablespoon.

    Flavored Gelatin (15 flavors)
    Dissolve 1/3 cup gelatin in 1 cup boiling water. Add 1 cup cold water. 1/3 cup = 3 oz. box.

    Sugarfree Gelatins
    Dissolve 1 heaping tablespoon gelatin in 1 cup boiling water. Add 1 cup cold water or fruit juice. Contains artificial sweetners.

    Instant Pudding Mix (8 varieties)
    Combine 2/3 cup of mix with 2 cups of cold milk. Mix well. Chill and serve.

    Danish Dessert (3 flavors)
    Combine a heaping ½ cup of mix with 13/4 cups cold water in a medium size sauce pan. Bring to full boil. Boil 1 minute stirring constantly. Cool slightly before adding 4 cups fresh fruit. Chill and serve. Also can be put into a 9" pie crust.

    Granulated Tapioca Pudding
    Mix 3 tablespoons granulated tapioca, 1/3 cup sugar, 1/8 teaspoon salt, 1 beaten egg, 23/4 cups milk. Let stand for 5 minutes. Then bring to a full boil, stirring constantly. Remove from heat. Add 3/4 teaspoons vanilla. Stir once after 20 minutes.

    Pearl Tapioca Pudding
    Soak ½ cup pearl tapioca in 1 cup water for 24 hours. Drain water. Add 4 cups milk and ½ cup sugar. Bring to a boil then cook slowly for 20 minutes. Beat 3 eggs, add ¼ teaspoon salt. Add to hot mixture and continue to cook for 8 minutes. Remove from heat and add ½ teaspoon vanilla.

    Cook Type Pudding Mix (4 Flavors)
    Stir ½ cup mix into 2 cups milk in small saucepan. Stirring constantly, cook until mixture comes to a boil. (Pudding thickens as it cools.) Remove from heat. Cool 15 minutes stirring twice. Stir before serving.
    Microwave directions: Stir ½ cup mix into 2 cups milk in large microwave bowl. Microwave on high 7 minutes or until mixture comes to full boil, stir every 3 minutes. Cool 15 minutes. Stir twice.

    Sugar Free Instant Pudding Mix (2 Flavors)
    Pour 2 cups of cold milk into bowl, add 1/3 cup mix. Beat with a wire whisk, rotary beater, or electric mixer at lowest speed. Beat until well blended, 1 or 2 minutes. Makes 4 servings.

    Clear Gel or Therm Flo
    Use as a clear thickener. Boil 4 cups fruit juice or water. Add ¼ cup thickener. Do not over boil. Therm Flo freezes well and can be used for canned pie filling.

    Instant Clear Gel
    For 1 pie: Combine 3 tablespoons instant clear gel with ½ cup sugar. Add 1 cup water or fruit juice. Combine with enough fruit for 1 pie. Add food coloring if desired. Chill and serve.

    Dutch Gel for Jam & Jelly Regular or Light
    Use 1/3 cup as pectin in a jelly recipe. Ask for more specific instructions.
